smoked

Real jerk. Straight from the drum.

Chicken marinated overnight in scotch bonnet and allspice, then smoked over pimento wood the way they do it in Boston Bay. Oxtail on weekends, until it's gone.

Who's cooking

Miss Pearl

Pearl grew up in Spanish Town, where her mother sold jerk from a steel drum by the roadside. She moved to Houston in 2003 and cooked for church functions for fifteen years before anyone convinced her to charge for it.

These days her daughter Simone runs the window and Pearl runs the drum. The marinade recipe stays in Pearl's head, and that's where it's going to stay.

"If it's not smoked, it's not jerk."
